    I've made this recipe twice now. It's a good one!

    I gave the peppers and quick blister over the burner on the stove before chopping them up.

    I intended to take plated pics but it turned into a pile of slop as soon as I scooped it out😂. However, what it lacked in plated appearance it more than made up for in flavor and I’m pretty sure I ate this whole pan over the course of the next few days. Adding some crushed tortilla chips or lettuce on top added some great texture too. Thanks for sharing this one👍🏼

      I didn’t share a plated pic as well…it’s not the most photogenic plated dish! But….it is a plate of goodness in your belly!!!!!!! Glad you enjoyed this!!!! That is some cheezy green chile chicken enchilada goodness right there!!!!!!!!!!!!!!!

    I am going to try to put this together tonight. I roasted some hot Hatch and some Anaheims, and I purchased a can of mild Hatch. I had some Poblanos, but I had a really difficult time trying to get the skins off, so I dumped those. I might try again with a new batch. I was only 3 peppers, so no biggie on that.

      @therealdocBBQ I am not a planner. I know I have had a whole month to make one dish, but my calendar was full, and it has been a stressful month.
      I don't think I can attempt a pie any time soon.

      barelfly I put it together, and it is in the oven. I tried a different cheese mix, and I think I might regret it. We'll see tomorrow.

    Carolyn We tried several ways to get a good sear on the peppers without cooking them. Finally settled on our "grill torch", it worked very good. I don't know where it came from, probably Amazon.

      This looks like a little Coleman tank. They are workhorses. I have also sacrificed tongs to just holding them over the burner on the stove.

      SheilaAnn That's exactly what it is, its basically a blow torch attached to a small propane tank. Picture doesn't do the flame justice, it can be turned up to real hot. We use it sometimes for putting a sear on sous vide proteins.

      Dozens of them on Amazon.

    I think I'm gonna post mine in a thread as I took a bunch of pics and don't want to clutter this one up too much with a ton of my own pics and commentary. I will post some more pics and impressions later, once we've eaten. I can tell ya though, I think the enchiladas are going to be KILLER, and the apple cobbler ought to be pretty good, too. I took just a bite of apple that was poking out the bottom and I could taste just a HINT of the Hatch green chiles in it - I'm sure when eating it with everything combined, there'll be more flavor from them. It's interesting, though. Thanks for the ideas!

      You are gonna love that cobbler…my wife saved the last bit of it for me for when I got back from traveling this past week…hahah warmed it up and a scoop of vanilla ice cream….done! Enjoy my friend!

    I gotta say, this series of posts from everyone that cooked up green chile chicken enchiladas has me smiling from ear to ear! I think the one thing I enjoy about this site the most is the opportunity to share our love for food with each other and having the opportunity to share this recipe with everyone and see the cooks….this is what it’s all about! This is what makes this place so special!

    Thank you all for giving this thrown together, cook as we go style recipe that is one of our family’s favorites a go. I hope it’s one that continues to stay in your rotation using the ingredients that are available to you!

    Here’s to green chile or any other type of pepper that makes your hearts warm…not only from the actually chile but from the love of sharing good eats!!!!!!!!

      Great sentiment! I'll probably give it another shot in a couple weeks. I was cleaning out my chest freezer this morning and I found a bag of hatch chilis from a couple years ago. They are vac sealed so no freezer burn. I took it as a sign that I need to try again lol.

    Ok, mine is out of the oven. The Oaxaca cheese blend doesn't have much color and because I didn't buy enough cheese, I just left the top layer sans tortillas. Looks a mess, but I am not serving this to guests. I meant to pick up another blend to go with it but forgot.

    Based on what others were saying, I strained the liquid and reduced the sauce a good bit. After several taste tests, I added more cumin, and granulated onion and I added.......lime juice, which gave it some tang, kind of like a tomatillo verde sauce.

    This dish would also be a great base for Sheila-quiles! Just use crunchy tortilla chips and two eggs, any style.
