    Team Cook July - A Nod To An LA Icon: The Brown Derby

    As y’all may or may not recall, I belong to a culinary historians club here in Southern California. A conversation came up the other day about the difference between a Cobb Salad and a Chef Salad. Then it clicked! With all this hot weather, why not a cool and refreshing salad? And whaddaya know, I have The Brown Derby Cookbook!

    Team Cook: Cobb Salad - make this per the recipe. You may prepare the chicken anyway you like (grilled, roasted, etc)
    Bonus Cook 1: The OG French Dressing. This is a bonus cook because I can’t stand French Dressing and will be making bleu cheese dressing.
    Bonus Cook 2 (not from the Brown Derby): Grilled Stone Fruit. It’s stone fruit season! Get you some peaches, plums, nectarines and get grilling! Serve over pound cake, shortcake, ice cream, sky’s the limit.

      for those of us who don't have paprika AND remembering that AR eventually downsizes pictures, can we get a text version of the recipe posted... I'd happily type it out, but I assume you can copy/paste text from paprika that already exist.

      I am working on it. I’ll probably have it done tonight. If you look back to other team cooks, you will see that I put the recipe text in a post as well as attach a *.paprika file. I just wanted to get something out there!!

    I'd be in on this one, except I've never seen chickory or watercress at any of my local grocery stores. Since you are semi-local do you have any hints on who carries those?

      OC Sandy Whole Foods? I mean, it’s not like you are going to the Hollywood Farmers Market are ya?

      If you can’t find one of the lettuces, just sub with more of what you do have.

      SheilaAnn Thanks, I'll check Whole Foods. As much as I used to like the Farmer's Market up in L.A., I'm not going all the way up there for a salad. lol

    Cobb Salad From The Brown Derby
    ★★★★★
    Team Cook Ideas, Veggies-Salads
    Servings: 4-6

    Ingredients:
    ½ head of iceberg lettuce
    ½ bunch watercress
    1 small bunch chicory
    ½ head romaine
    2 medium-sized tomatoes, peeled
    2 breasts of boiled roasting chicken
    1 avocado
    6 strips crisp bacon
    3 hard-cooked eggs
    2 tbs. chopped chives
    ½ cup fine grated imported Roquefort cheese
    1 cup Brown Derby Old-fashioned French Dressing

    Directions:
    Cut finely lettuce, watercress, chicory, and romaine and arrange in salad bowl. Cut tomatoes in half, remove seeds, dice finely, and arrange in a strip across the salad.
    Dice breasts of chicken and arrange over top of chopped greens. Chop bacon finely and sprinkle over the salad. Cut avocado in small pieces and arrange around the edge of the salad. Decorate the salad by sprinkling over the top the chopped eggs, chopped chives, and grated cheese. Just before serving mix the salad thoroughly with French Dressing.

      SheilaAnn - Yes! Arugula is one of the substitutions I will make. I'll also also go with an endive or radicchio in place of the chicory. That way I can keep with the spirit of the recipe as closely as possible.

      My local fruit n veggie stand, Pipkin's, suggested radicchio and they had watercress.
      Only their idea of English Mustard was "Colman's of Norwich" a powder in a lil yellow tin.

    Brown Derby Old Fashioned French Dressing

    Sauces, Spices, Etc, Team Cook Ideas
    Difficulty: Easy | Servings: 1.5 quarts

    Description:
    This is the French Dressing which became so popular among the stars that the Brown Derby was prevailed upon to bottle it for home use. The cup of water is optional, depending upon the degree of oiliness desired in this dressing.

    Ingredients:
    1 cup water
    1 cup red wine vinegar
    1 tsp. sugar
    juice of 1/2 lemon
    2½ tbs. salt
    1 tbs. ground black pepper
    1 tbs. Worcestershire Sauce
    1 tsp. English mustard
    1 bead garlic, chopped
    1 cup olive oil
    3 cups salad oil

    Directions:
    Blend together all ingredients except oils. Then add olive and salad oils and mix well again. Chill. Shake before serving.
    This dressing keeps well in the refrigerator. Can be made and stored in a 2 qt. Mason jar.

    Notes:
    From SheilaAnn: I think a “bead” garlic is a typo and they mean one head of garlic.

      Well this was fun. Thanks SheilaAnn for this month’s team cook. I decided to make the Cobb Salad and add on both Bonus Cooks. Bonus Cook 1 was the OG French Dressing from the recipe supplied by Sheila Ann. This recipe was more along the lines of a traditional vinaigrette. For Bonus Cooks 2 the stone fruit of choice was nectarines. I grilled them then topped them with a toasted pecan bourbon sauce. The chicken was grilled. Great recipes for this Team Cook Sheila Ann!

        Here we go. Grilled thighs instead of breast, blue cheese because I couldn't find rocquefort. I made the dressing to, just not pictured. And i forgot the chives for the pic - i have them though. No grilled stone fruit though. I got lazy as usual. And no avacado. I am not an avacado fan. Great salad SheilaAnn
