I’ve been looking for a new unit that combines the functionality of the parilla/santa maría grill with a a lid which allows it the functionality of a smoker as well. Most research points me in the direction of AZ BBQ outfitters. The units look like they are built with quality, but you never can tell. Does anyone here have any experience with their grills/smokers? I’m curious about the build quality and functionality of their units.

There are company's that make Santa Maria kits for the Weber kettle that would give you the flexibility you are looking for.
On the Hasty Bake you would raise and lower the fire instead of the food. The adjustable fire height is something the Hasty Bakes are known for, as well as their reputation for making a quality product.
Pitmaster rules however require me to whole heartedly encourage you to buy a unit from AZ BBQ Outfitters and let us know how you like it. Looking at the website, they certainly look like nice rigs.
