I have had my Gabby Grill insert for over a year and thought it worked well. Origianlly I was setting on my firebox of Delilah and that was an OK solution. So in May of this year, I picked up a Weber Original; thinking that having a dedicated Santa Maria set up would answer the mail and avoid buying something more expensive....and all it did was highlight the limitations.
So I just sold the Kettle and the Insert on FB Marketplace
More importantly, I found a guy who is building a Santa Maria for me
It is based on 48" Sunterra (Argentine Grill with Brasero featuring a cart with double swing down door (sunterraoutdoor.com) )
It does not include the Firebrick but it is about 1/2 the price and located in Virginia...saves $$ on Shipping
