I saw an old recipe once years ago. All I remember is that it said something like "add some lard the size of a hen's egg..."

We often think cookin' "X" is hard today, but imagine trying to learn to cook before thermostatically controlled stoves/ovens, measuring cups, thermometers, standardized products, and on and on.

I know we do that now to some extent, but it's mostly by choice. And most if not all of us here do use thermometers.
