Panhead John 's post about Cajun cookbooks reminded me that I ran across a cookbook put together by the New Orleans power company starting in the 1950s. It is now called the Entergy Cookbook, but it originated as the NOPSI Creole Cuisine. It is on-line now and has all sorts of interesting NO type recipes. My son’s four years at Tulane and subsequent week-long wedding celebration after were the best eating experiences ever. I have tried my best to incorporate flavors into BBQ but things as simple as Mac and Cheese have changed for me. Loved Panhead John ‘a post and this, as well.
