Entergy Cookbook

Panhead John 's post about Cajun cookbooks reminded me that I ran across a cookbook put together by the New Orleans power company starting in the 1950s. It is now called the Entergy Cookbook, but it originated as the NOPSI Creole Cuisine. It is on-line now and has all sorts of interesting NO type recipes. Some are pretty interesting and some make my stomach hurt just reading them. Anyway, a bit of history.

I have it. They used to print pamphlets and display them on public translation street cars and buses. My mother swore they had the best recipes.

My son’s four years at Tulane and subsequent week-long wedding celebration after were the best eating experiences ever. I have tried my best to incorporate flavors into BBQ but things as simple as Mac and Cheese have changed for me. Loved Panhead John ‘a post and this, as well.
