I have had many cook books, most just list recipes. I just got the book Salt Fat Acid Heat, and it explains why you do things and when. That has already improved my cooking. I used a recipe from there and one other, improvised a bit and tonight made the best tomato based pasta sauce I have ever made. There are recipes in the book but really just as examples of things to do. It is like Meathead wrote an all purpose cook book.

Lot of cook books but few actually teach you to understand the why as well as the how. Jacque Pepin, Meathead, Ken Forkish, and a few others come to mind as authors who have succeeded in deepening our knowledge and skills.

Mr. Bones, the company I work for is great. They gave us all ipads back in the fall, been using it. But I have a paperwhite too, and an older kindle that my mom got me when they first came out. Still like to hold a real book once in awhile.
