All About Braising: The Art of Uncomplicated Cooking by Molly Stevens. James Beard award winner for 2004. It is easy to follow and has a lot of good information, aside from the recipes. If you're looking for a gift to give, or request, this is worth at least a look.

smokinfatties - I do, too. A big old pork butt crammed into my Lodge dutch oven is infinitely better (to me) than wrapping. If it's too big, I cut it and use two ovens.
