Im hoping to find a few more books this fall. The next one i am hoping to find next is a book similar to the Sauces book, but focused on stocks and broths.
the book in the photo is where i’m currently at, but not set on it yet. So i come here asking for your suggestions.
22” Blue Weber Kettle with SnS insert
Kamado Joe Jr with Kick Ash Basket
Char-Broil Smartchef Tru Infrared Gasser
Anovo Hot Tub Time Machine with Custom Hot Tub
I’ve seen this book, but never dove in. For the most part, I use the basic recipes I learned from culinary school. Straight outta the Professional Chef.
Books like Food Lab, ATK and the like will be solid resources. Technique is key for excellent broths, etc. Skimming, defatting, making a successful raft for consommé. Roasting bones, roasting veggies, using a splash of vinegar.
And the health benefits of simply sipping an excellent bone broth are fantastic!
Those techniques are mostly what i do now, although often i skim a bit, then refrigerate so i can take the fat solids off. Last winter i made lots of bone broth for sipping. I just know that im likely missing some key wisdom, and really would like to clean up more of my food scrap and other kitchen waste, which i love the mention of food waste in the description.
I certainly could use more practice in a raft for consume.
Great answer. +1 for ATK. I also recommend borrowing or buying Anthony Bourdain's Les Halles Cookbook in which he covers the ingredients and techniques suggested by SheilaAnn .
