I really want to expand my vegetable game, about 80 percent of what i eat any more seems to plant based, while i enjoy it all, i know there are millions of people out there that bring it up to another level, sooo i took the plunge.

Weber Smokey Joe
I need to do the same. I put a lot of effort into the main dish and sides are often an afterthought. As such, they tend to be pretty boring imo.

If you're going to pick an author, that would be one to start with.
I've been wanting to get more into this myself. I got really into Greek cuisine this past spring and one thing that I very quickly noticed is that meat is not the highlight of their food. As an American, not eating meat with every meal feels really weird, and this has made it difficult to really explore vegetable-based dishes.
Like Andrr said, my vegetable-based forays have been boring....probably because they are boring. I suspect near-eastern cuisine has cracked the code, as it were, on making these things tasty and it would do me good to learn more about how they do it.

I really improved upon mine over the past year, but i know it can still be improved upon greatly, and hard to beat Jose for a better inspiration.
A really good friend of mine is from Lebanon, he has expanded my brain a lot, everything he brings me is incredible.Last edited by Richard Chrz; August 21, 2026, 09:28 AM.

After I had my heart attack, I was heavily exposed to the Mediterranean diet, which Greek culinary tradition would be an obvious part of. One of the interesting concepts was using meat as a seasoning. Making a plant-based meal that's flavored with meat, like some might do adding bacon or a pork hock to a soup.

Murdy one of my reasons was health based as well, my nerves and nervous system have been so beat up by lupus, and my body from the treatments, i’m really trying to ask myself, is what Im eating helping repair nerves, and other cellular damage, am I supporting repair? Plus i can eat plates of it for satiety, I seem to always in the mood to eat and snack, this has supported better snacking,

Pit Barrel Cooker
Weber Master-Touch
Blackstone Omnivore 4 Burner Griddle
Thermoworks: Signals, Billows, Thermopens, Thermopops, Nodes, bunch of silicone stuff, and more!
OnlyFire Rotisserie w/ Basket attachment for the Weber
Vortex for the Weber
Both of Meathead's books!
Way too many BBQ related accessories, tools, and doo-dads!
I have the same problem. Sides are generally not well thought-out when I cook, and I'd like to do vegetables better.

Monday through Friday I have no meat until dinner, and Monday i have no meat whatsoever. This was partially driven by a few things, but the increase pricing in proteins, and the quality becoming less…. I’ve tried to emulate cultures built on mostly plants, and better animal protiens,
Weekends I have free pass, and I find I am often still wanting fresh produce of some sort. .Last edited by Richard Chrz; August 21, 2026, 03:49 PM.

I'm reading the sample of Vegetables Unleashed on Amazon and wow....it certainly draws you in. The book certainly isn't going to be a dry collection of recipes! The writing style, certainly aided by his co-author, is very engaging.
We were mentioning boring earlier and Andrés tackles that notion in the first few pages:

I’ve spent a few days now reading his cooking philosophy in this book, etc… it certainly made me feel really solid about this purchase. Plus the produce is for the most part easy to get, and the preparation for each meal seems very doable, and will open up more ideas, or so i believe.Last edited by Richard Chrz; August 21, 2026, 11:59 AM.

Thanks for the post. I just purchased a copy of something I didn't know I needed
Seriously though, just like others have mentioned in this thread I need to up my vegetable game. My wife started a garden last year AND we have a CSA with a local farm, so we have LOTS of vegetables right now. To boot Amazon has the book marked down to $20.37! I'm looking forward to learning some new recipes and techniques.

22" Weber Kettle w/SNS, 18" WSM, Bronco, Grilla Chimp, Traeger Tailgater, UDS, Camp Chef Tahoe Stove.
I was engaged to the vegan for awhile and I ate like her when I was with her. Some of that stayed with me and there are at least a couple of days a week - on average - that I skip meat. Veggie pizzas, roasted cauliflower, my breakfast of eggs and humus on naan this morning. Those books look pretty interesting

My wife struggled at first when i told her i was doing every Monday without any meat, while that day has kind of become a fend for yourself with leftovers, i explained a grilled cheese sandwich or cheese pizza was vegetarian.. i think she imagined a big plate of an over cooked boring vegetable,. Lol

Richard Chrz I know. When I started dating Fay, the vegan, I thought the same thing. But she cooked stuff with veggies that were excellent. Unfortunately I didn’t pay close enough attention to her recipes lol
