I really enjoy Adam Witt's YouTube channel and I stumbled upon this video this afternoon. It is the Four Styles of Italian Pizza done with one of the top Italian Pizza masters in the United States, Chef Leo Spizziri, who among his many credentials is one of only about a hundred chefs certified by Italy to teach Italian pizza making outside Italy. The video is focused on discussing (and cooking, of course) the four Italian styles of pizza that are direct ancestors to American styles.
Adam videos always have excellent production values and this one is no exception. It is thirty minutes long and well worth your time if you're into or getting into pizza: https://www.youtube.com/watch?v=NVPQt3Wt__E
The four styles they cover are Sicilian Sfincione, Roman Pizza Tonda, Neapolitan Pizza Classica, and Roman Pizza al Taglio. I especially liked the discussion of true Neapolitan Pizza vs the far more practical and relaxed Neapolitan Pizza Classica.
Unfortunately, there isn't much on the exact recipes (flour weights, baking percentages, etc.), but the video is an excellent jumping off point for further exploration.
(One of Adam's production trademarks is inserting movie clips or internet memes to highlight a point and they can be a bit jarring if you don't know to expect them.)
