        Exactly! I've watched a lot of Flattop King videos thinking "that looks easy" and then I try it and think "dang this isn't as easy as he made it look."

        jayjordan Same here. "it's just eggs, just flop 'em over" I always think. Busted, breaking, ripped omelettes ensue every time.

      Really impressive. The key is a nice level griddle. He is a real pro.

        That’s the diner omelet: thin and flat, and cooked solid. I do mine in a rectangle, and roll them up, but that’s because I only use 2 eggs. He’s using what looks like 4.

        The trick to these is the quick spatula movement under the eggs at the beginning of the fold. After that it’s all in the wrist.

        Going to make hashbrown omelets on my griddle tomorrow, but I am using my new 8" omelet rings. Hope that will help me.

          I posted that here, about the instant pot rings. They work, but they miss the point. They are a way of adapting the wrong tool for the job at hand. If you want that kind of omelet, don’t use the griddle. If you still want that kind of omelet and want to cook outside, use a side burner or a skillet over a properly modulated fire (300°ish). Use the griddle for the diner omelet.

            It cannot be blazing hot, the amount of time it takes her to add ingredients n fold the first three, the last one would be toast.

            Pretty good and looked pretty tasty.
            I am a bit spoiled meself with the creamy French omelette.
            Worked a bit at Jacque Pepin style. My wife likes the western tinge of brown style. Those are brownish burrito style. One could have lots of fun with the fixins.
