That thing has been in the back of my mind for the past few weeks. While watching brisket videos this evening, I stumbled upon Bar-A-BBQ's channel and.....they have a video on that very pork steak!

The owner (who we all met briefly at the Meat Up), Cooper Abercrombie, walks you through in great detail how they make these steaks....everything from slicing, to seasoning, to cooking, to resting. (As it turns out, they use a rack rotisserie to cook them!)
The sixteen-minute video is well worth watching. Cooper is extremely articulate and clear. All of the videos on the channel that I have watched are great, instructive, and informative. There is even a start-to-finish video on how they do their briskets (spoiler: they purposely do not season the sides!).

Wow I want to go back. And I can....as far as distances in Texas go, it's basically "in my backyard."
