    A Different Way to Spatchcock

    At least to me. Seems fairly easy, and separates dark meat from white meat completely, depending on how you count wings.

    He still cooked the white meat and dark meat for the same amount of time?

      Seems like he did. He emphasized “simplicity” a lot. He did mention cooking to proper recommended temperature.

      I believe this works as the breast meat is somewhat shielded by the ribcage while the thighs are facing the heat more.

    Interesting variation on one I showed on here during the Bronco/PBC throwdown...........though his is more compact with the separation method.
