I used to read CI, and have a half dozen or so of their annual conglomerations, dated before about 2009ish. They tend to do a deep dive on techniques and chosen recipes, rather than variety, so likely you already have the knowledge and info. I don't have this one, though, so can't swear to anything.

I'll offer a voice of dissent: America's Test Kitchen is great and it's a resource I really do trust. While I don't know anything about that particular book, I have been impressed with everything else they offer and I always enjoy watching their PBS show. $22-28 is maybe a little on the spendy side, but I bet the book is worthwhile.

Thanks for all of the encouragement. My MBS died down and I decided to pass. I am an ATK fan though, and I have one of their books somewhere. The fact that I can't remember exactly where had a large influence on my decision to pass on this one

I use to subscribe to CI long time ago and bought a few of their books. For someone that was starting out 30 years ago in getting to understand cooking, CI was great. I was looking over a CI magazine just a few months ago and basically said to myself as I was purusing through the magazine, "yep, know that. Uh huh, got that, etc".
Franklin's book on steak was very good. Don't know if you have that one. The book just talks about steak.

Here's what you do...leave it to fate. Get a regulation sized dart board. Measure the regulation distance back. Throw a dart. If you hit the double bullseye then the universe is telling you not to get it and you better listen! Otherwise its telling you to get it, and you should listen to that, too!

I've been impressed with CI's material, especially when they do the experiments and gather the data. I also like their line illustrations, they're really beautiful and super informative. Technical illustration is a very difficult skill - done right, one hardly even notices because it's so good. I've seen plenty of it in my science world and I put CI's in the top class for those.
But OK, you have resisted. This time...
