    Brian Lagerstrom: My New YouTube Obsession

    I found this guy while perusing Bahn Mi recipes on the intertubes and I'm hooked. He has incredible recipes and his videos are fast paced and well put together with very little "fluff" in them aside from a nod to a sponsor in some of them which is easily skipped over as all of his videos I've watched so far have chapter markings in them. The one really cool thing about his sandwich videos in particular is he even includes instructions on how to make the bread/bun/roll that the sandwich fillings are served in. Each video also has the full recipe in the description and Paprika seems to be able to perfectly scrape the recipe from the description. Can't wait to try the Bahn Mi recipe today. Highly recommend you give his channel a look!

      I've been watching him for a few months myself and really enjoy his videos. He's a very pragmatic cook, but is not afraid to use special ingredients or techniques when they truly enhance the dish.

      His background in baking does come through a lot, though.....you'll see him give measurements by weight instead of volume for a lot of things, but that is a very minor quibble.

      One of my favorite videos of his is actually one of his older ones: Which Salmon Should You Buy.

        All measurements should be mass and not volume. Not sure why that would be a quibble.

        I do agree....but as hard as I try to catch up to the rest of the civilized world, I know what 1/4 cup of hot sauce is. I have no idea, intuitively, what 50 ml of hot sauce is.

        This was perfectly timed. I just watched his vid on Oklahoma onion burgers. I had burgers planned for dinner and these will go perfect on the new flattop. Great video but I can do without the long ad for skin care products in the middle of it.

          I don't mind the sponsorship type ads; I far prefer them to other types of in-video ads, such as an ad every five minutes. Sponsorship ads are time-bounded and easy to skip. They tend to be upfront and honest about what they are...."hey, at this point in the video, I am going to try to sell you something as this is how I make my living doing this" and they often fit the flow of the video. Many content creators' transitions in and out of these sponsorship segments are quite clever. And they're always soft sells.

          Alex the Cooking Guy does this extremely well.....he has a small yellow progress bar that goes from left to right during the sponsorship segment, so you can easily fast-forward. Even for me, there are only so many ads for Squarespace or Hello Fresh I can take.

          From what I understand, most of the established (1.5 M+ subscribers) are moving to some form of a sponsorship model (income independent of Youtube) as the YouTube ad revenue algorithm can be quite fickle it seems.

          But back to Brian....he recently started a series called WeekNighting and I especially enjoy. There's a weeknight gyro on there I absolutely need to do.

            I started watching him when it seemed like he was more focused on bread and it seems like he branched out as time went on. His channel used to go by a different name... Something and sardines I think?

              The Banh Mi turned out absolutely perfectly! Loved it, as did my wife who is usually not a fan of pork belly unless it is bacon. The buns were off the hook good!

                Tha Banh Mi recipe sounds great. AS does the Butter Chicken. And the Bibimbap (sp?).... and...
