either the wagyu was room temp or that was 80-20 or even 75-25. It looked so soft!
is the marrow butter overkill with wagyu? Would you use a marrow butter on a regular chuck/blend grind?

"is the marrow butter overkill with wagyu?" My thought exactly. I know I blaspheme, but I prefer prime to wagyu, which I find too rich. However, I will imbibe if it is forced upon me.

Had marrow butter on a wagyu fillet at Kaynes Prime the other day. Was Devine, and I don't like fillets

fkrall I am the same on steaks. Both fresh cut and dry aged, I prefer US Prime.

@fkrall agreed on the Prime over Wagyu. Also agree on the Wagyu being much too rich overall. A bite or 2 is nice but then I am done.
I bought the Husband Snake River Farms Wagyu hot dogs for Christmas 2 years ago and to my absolute surprise we had them one time and they sat in the freezer for nearly 6 months before we tossed them. NOT up to his gourmet standards when it comes to hot dogs. He could not exactly explain what it was about them he didn't care for but just had an overall dislike for them. I was a little unhappy after spending nearly $100 on HOT DOGS!
