    Oma’s German Mustard Potato Salad

    Oma’s German Mustard Potato Salad

    BBQ, German, Sides

    Ingredients:
    ~ 9 russet potatoes, chopped to bite size
    1 yellow onion, dice chopped
    1 pack of bacon, dice chopped
    1 cup brown/spicy mustard
    1/2 cup Red Wine Vinegar
    bacon grease
    salt
    pepper

    Directions:
    1. Boil potatoes until tender (or your desired doneness). Rinse and let cool while bacon and onion mixture cooks down.
    2. In skillet, cook down bacon and onion. Add pepper once cooked down some. Bacon doesn’t have to be crispy, but cook to your desired doneness.
    3. Combine mustard and vinegar with salt and pepper as well as 2-3 TBS of bacon grease.
    4. In a serving bowl, combine potatoes, bacon and onion mixture, and mustard/red wine mixture. Toss to combine, adding salt and pepper to taste.
    5. Refrigerate to allow flavors to meld and serve cold.

    Notes:
    The flavor profile of this is a personal preference, whether that is forward on the mustard flavor or red wine vinegar. You also want the mustard and red wine vinegar dressing to coat the potatoes, so ensure the potatoes are completely cool before dressing. It should then be a creamy type dressed potato salad.

    And, for my family, this dish has always been served in this yellow bowl, which was my grandmother’s. I don’t know how old this bowl is, but it brings a smile to my face knowing it will always be for her potato salad!

    My all time favorite potato salad. The brown mustard flavor really does well with the red wine vinegar, but the bacon grease added in just ups this to another level. I grew up eating this type of potato salad and really won’t eat any other potato salad unless it’s similar to this. My grandmother always made this for our family gatherings, and she always made it in this yellow bowl and used what looked like a shower cap to cover it during transport So many memories with that yellow bowl, it brings a smile to everyone’s face when they see it. \

      gcdmd - from the recipe you want to share, click the three ellipses on the top of the recipe page, select share, then select paprika file. Next, save the file to your device somewhere you can easily locate. From there, you upload the file as you would a normal image but select file and go to the location you saved that paprika file, then upload to the AR site.

      Thanks for this Jeremy! I like potato salad ok, but I’ve never made any myself. This one sounds like it will be my inaugural voyage into making a potato salad. It sounds great and am adding it to my Paprika.

      This looks like something to try. Thanks for the flashback.

      My Grandmother, Mothers side, made a German potato salad. I don't remember it having mustard and it was served warm. I'll have to ask my brothers if any of them have the recipe.

        Thanks! I just downloaded. We have lots of CSA potatoes (including purple ones!) on hand and this will help take care of that. It will also help us get ready for our two trips to Germany this summer.

          barelfly Both trips are for conferences for Lisa. First one is in Potsdam, with a night or two in Berlin for her to give a seminar there. Second one is on the outskirts of Frankfurt, but we will stay in Oberusel, where I will be wandering the historic area while she's busy.

          This sounds amazing. Too many potato salad recipes forget the mustard, IMO.

            That is amazingly similar to mine. I reduce the vinegar and add sweet relish. I also add some mayo and boiled eggs. Celery seed to taste, not too much or it takes over.

            I guess it is midling close lol
