Smoked a smallish boneless pork roast\butt today (impromptu) mainly to test it out after replacing auger, chute, etc.. It held temp great 275) in my 30 degree weather. Smoked it for about 4 hrs then finished in the oven covered at a bit higher temp 335. Turned out pretty good for a fast cook. I’m just happy to know all is working with the new parts. Still waiting on my chute slide as it’s back ordered, then I’m done bringing this thing up to gen 2.
Did some beef shorties yesterday and finished them in the oven after 4 hrs to save fuel.
Came out perfect and the house smelled great, becoming a real fan of this technique.
Takes a bit of the guesswork out of when you will be eating
