I have a new Rec Tec 680 coming next week and I was looking for a collection of tips and tricks for this fine piece of equipment. Does anyone know if someone has collected tips into a single place? Or should I just browse the forums for this?
Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
I called and spoke with Ben from RecTec because I was a bit unhappy with the amount of smoke I was getting. He gave me a couple of tips...
1) the grill is _supposed_ to be calibrated for the temperature probe. Don't adjust because grate level is different.
2) If you want a bit more smoke, put a small chunk on the heat deflector. (this does work)
3) Water Pan... for the most part, it is unnecessary.
4) Season it before your first _real_ cook. There are recommendations on how to season on the site.

I love my 680 going on 1 1/2 years, You may want to vacuum it out more often than RecTec recommends. Be sure not to dump the pellet dust in the hopper when loading, it will build up in the auger tube and cause problems. The cooker will change some after a few good uses, don't sweat the temperature differences at first. Be sure to clean it well before a hot cook if you have been using it for a lot of low n slow cooks so you don't have a grease fire.
