Cook # 2 on the new Pit Boss Pro Series 6 Elite (Lowes Exclusive). I'm doing some beef short ribs found at Walmart yesterday. Nothing fancy; dry brined with salt only for about 12 hours and then covered with a beef rub. Set the PB to 225*F and alarmed 2 PB probes for 203*F. I'm guessing 4 to 6 hours.

This is where I set the unit to use - half inside/half outside the garage. When not in use, it sets back in the corner directly behind where it is in this picture. It is also covered with the PB Cover I bought for it while stored.

The outside temperature today is about 57*F and cloudy. An excellent day for smoking. 😊
