Well I finally carved out some time to do a proper cook. I purchased this cooker before labor day but have not been able to do a proper cook. I did perform some Mods, I added a Heat Deflector and Alternate Flame Tamer (open on all sides). These mods helped even out the temp across the cooker.
As for the cook, I was at Wholefoods and asked at the meat counter if they had plate ribs as there were not any on display. They did!, and I purchased one plate. (about 6 lbs) Plan was to cook these yesterday, but life has a way of changing plans on you, so I had to cook them today.
6:20 AM Fired up the Pit Boss
6:25 AM prepared the ribs.(Followed Susie Bulloch method, subbing the rub I had on hand)
7:10 AM Put the ribs on the cooker - cooker settled down to 250
10:30 Started spritzing with vinegar and hot sauce. about every 45 - 1 hour
about 2:40 (Pulled when IT hit 200 - 203 (depending on location) Probe tender everywhere)
Wrapped in foil pan and into cooler
Got super hungry at 4:45 (way to early for dinner) but needed food. Cut into them and they were great.
