    WellI know there's going to be some hollering BUT I've always said I suck at pics!!
    Just did the first cook on the PG500, and I am LOVING this pellet pooper.
    3 pound Tri tip.
    2 hours at 225, and pulled at 135.
    wrapped it up and let it set for 30 minutes.
    VERY acceptable smoke profile using Cook Shack Hickory pellets.

    I am TOTALLY impressed.
    Wife is TOTALLY impressed
    Son, Daughter GrandDaughter TOTALLY impressed.
    I just ran it at factory settings and will probably continue on that way for a while before I go to exploring the LHT, and HHT settings.
    I'm a very satisfied Fast Eddy fan right now.

    Used the PG500 again tonight and continue to be impressed.
    Chicken thighs glazed in a spicy honey sauce.
    400 degrees for 45 minutes. Just followed directions from CookShack Sight.
    Seasoned the thigh, brushed them in the honey sauce and in they went. I sincerely expected to open the door to some burned on glaze BUT crispy sweet perfect crust. I pulled them at 185, and cooked perfectly. NOT dry.
    I need to figure out how to take pics and post them from my phone.
    I'm kind of impressed with this Fast Eddy cooker.
    Bonus?
    I have 2 different buyers interested in the Memphis Pro and hope to sell it Friday morning.
    A good price for them, and one less toy to set around.

      I'll give this a shot. 2 hours in.
      PG500 set at 275.
      1 rack baby backs, 1 rack Saint Louis style.
      Following a Cookshack Recipe with sugar in the raw followed up by Fast Eddy Rib Rub.
      According to the re ipes Cook time should be right around 3.5 hours for either rack. It will be interesting to see the results.

            Almost an hour later and STILL pouring rain. Poor PG500 is out in the open. I guess we will see how waterproof it is. This shower came out of nowhere!

            I went to 4 hours, and it let off raining long enough for me to run out and pull. They were a BIG hit with the family. Personally I thought they were too sweet with the turbinado sugar under the rub. I'm a purist with ribs. A bit of rub, and a lot of smoke.
