I started my Pitmaster journey with a Traeger a few years ago. I’m glad my adventure began that way due to its ease of use for the inexperienced. If I started with just a kettle as is, I most likely would have thrown in the towel. Then I found this incredible community that has taught me so much.
It was a good ride, but I’m moving on from pellet cooking. Selling my Rec Tec to the son-in-law. Since discovering the kettle/fan combo I haven’t used it much in the last 8 months or so. Besides, the kettle/fan combo is a better set and forget cooker with much better smoke flavor. Don’t need to worry about parts failing when you’re right in the middle of a cook for a bunch of guests. Granted nothing has failed to date, but it’s inevitable at some point. Even if the fan on the kettle dies in the middle of a cook, I’m not stranded. Just might have to adjusts vents periodically. The only thing I’ll miss is the capacity.
Guess what I’ll do to fill the void left from my RT-680? If you guessed getting a 26†Weber kettle with fan/Fireboard/SnS/DnG/Easyspin grate, then you guessed correctly. Combined (if need be) with my 22" that solves any capacity concerns. Oh and then there's my PBC.
Don’t get me wrong, I’m not bagging on pellet grills. They are great for what they do. It’s just my opinion that the kettle/fan combo does everything a pellet grill can do and does it better with just about as much ease.
Plus, with pellet grill companies popping up all over the place and the technology moving at light speed, who knows what the future may bring.
