Hello everyone, I have been a long time (8yrs) Traeger fan however this past summer I picked up the Smoke thermometer recommended by this site. After I set the Smoke up on the Traeger I monitored the temps over a long cook by using the iPhone app and graphing capability. I quickly realized that the temps in the Traeger would fluctuate 20 to 70 degrees. I read all the troubleshooting recommendations which included cleaning the smoker fire box, setting the vent cap distance, using genuine Traeger pellets, and making sure the weather out side was suitable (75-80 no wind). I believe I figured out the issue with the Traeger and that was the placement of the systems temp sensing probe. When I set the Smoke probe up in the smoker I would set it at the recommended 1 to 1 1/2 inch away from the meat. When the smoker was at temp 225 the Smoke probe was reading 275 to 350. I then ran a test with the Smoke probe placed directly next to the Traeger probe and as expected the temps matched degree for degree. After reading Meatheads book that stressed consistent pit temp is essential to good BBQ I realized I needed better equipment.
I have been researching for several months now and it has come down to the YS640 and a Pitts & Spitts Maverick 1250. My biggest concern is consistent even heat throughout a long cook. I was initially leaning towards the YS640 until I found the P&S mainly due to rusting issues I have read in many other forums. Does anyone have a P&S Maverick that could confirm consistent temp control or maybe any good/bad experiences with either of the smokers.
