I am planning on smoking my first batch of beef short ribs on the pellet smoker tomorrow. I was thinking of using a blend of hickory pellets and cherry. Any suggestions on the ratio? My initial thought was 3 cups of hickory to 1 cup cherry. If it makes any difference, I am using B&B Hickory Blend and Lumberjack 100% Cherry. Thanks.

I use mesquite instead of hickory (the old Texan in me), but I also use a 50/50 blend. Hickory (or mesquite) have very strong flavors so they will easily overpower the cherry.

Sorry but I’m a mesquite guy with beef shorties. Fruit woods are for pork and poultry but hey, either way those puppies should be delicious. Post those pix !!!!

Thanks everyone. I went with equal parts hickory and cherry. We will see how it works. Would love to try mesquite in the future, but I am trying to burn through the current inventory. Will definitely post before and after photos in the Show us what you are you cooking thread. I tried to get a good picture of the hickory/cherry smoke but with the sunlight, the smoke gets washed out.

That's a good combo. If you ever want to try a really good premix, try Lumberjack Competition Blend (maple, hickory & cherry) or Cookin Pellets Perfect Mix ( hickory, cherry, maple & apple).
