I had to learn how to cook pizza on my gas grill. I started thinking that the stone had to be blazing hot. I would burn the bottom and the top was not cooked. I eventually starting cooking with the stone at 400-450 deg. F. On my gas grill, I use two burners at medium low, and that is where I have the stone. I put the third burner all the way high, to provide heat to the top of the pizza (and I use a smoke tube). This allows me to have time to get a good crust on the bottom and the top is cooked as well.
I would try lower temps on the GMG pizza oven. try to get the stone on the bottom to about 425, and see if you have more control. This method takes 15 to 25 min., depending on the pizza and the exact stone temp.
This should allow you to close the grill, and get some smoke in there. I close my gas grill, to get that radiant heat to cook the top.
