    Hi There, Just loaded up my Yoder 640, 3 racks of BB from Costco. Some sweet potatoes and onions that I rubbed with Avocado Oil and a few non salt spices; I rotated the veggies to run parallel with the ribs after the picture.

    One rack of ribs looks very light, I am doing this for a friend and he has health issues and can't have any salt, so I make up a special rub just for him. On the other 2 I first applied a light coat of House of Q 'Slow Smoke Gold BBQ Rub' as a binding agent then applied R Butts R Smokin' 'Butt Kick'n Chicken' and then some House of Q 'House Rub'.

    Into the pre heated Smoker @ 225*, will probably take 5 1/2 to 6 hours to get them where I want. There will be some good eats tonight!!

        After 3 hours I sprayed them with apple cider vinegar, and after the picture I re-arranged and rotated ribs & veggies. Click image for larger version

          At 4 hours and 20 minutes the pit controller was reading 226* and I opened the lid and sprayed again. I am using a ThermoWorks 'Extra Big & Loud Timer' to keep track of my cook time, and what is nice about this timer is that as well as counting down, it also counts up, so in this picture it has been 4 hours and 45 minutes from the start of the smoke; helps us old farts to remember exactly how long things have been smoking!!               Hi There, After 6 hours and 45 minutes I took the ribs off the smoker, they didn't look like they were done as the meat hadn't pulled off the bone very much and they weren't as limp as usual, but they were probe tender. The exterior was just very slightly tougher that I like, but the majority of the meat was great!! My company thought it was my best yet. Great flavour and really great taste. I am a happy camper! I am not sure how to keep the exterior a little softer. Smoke flavour was just right, not over powering but noticeable. Veggies were great, they need to be put in when the ribs go in or they will no be cooked enough, i have learned from the past attempts. Click image for larger version
