Saw a recipe on All Things BBQ The Sauce on their YouTube channel. It was a boneless Italian pork butt and this what the hounds and I were cooking.
In their video they were cooking on a Weber Summit at 325 degree F and using applewood chunks on the coals. I decided to use the Yoder YS-640 for the cook. In order to replicate the smoke flavor that burning hardwood would produce I used the Amazn Tube filled with applewood pellets.
I didnt have the bbq marinade he called for so I made my own after looking up and reading the ingredients in the marinade and I used a Penzy’s Italian Souce mix instead of the Cattlemans mix. Both were delicious and I will do this again sometime.
