    Ribs and their leftovers.

    Did 4 slabs of St. Louis ribs yesterday on YS-640. 2 Slabs with Meatheads and 2 with eat BBQ. Wrapped ribs for first time (started a bit late). They looked great, but, ended up overcooking the 2 smaller slabs although they were tasty, however, the meat fell off of the bone and I like a bit more bite. Anyway, had some leftovers and tonight after reading @Troutmans post on muffuletta of pork did a spin of that and a pressed Cuban sandwich. Made a fresh olive tapenade then cut rib meat off of the bones, grilled the bread, sautéed the rib meat in a bit of olive oil, and made sandwich with provolone cheese and then pressed it on the grill. Was pretty tasty.

    I don't ever remember seeing a left over rib. I'll definitely keep that in mind if I do. It looks good,

      When ribs are on the table, my stomach expands to meet the supply. Never any leftovers, even if I'm left with the python-who-ate-a-whole-chicken feeling for a while.

      Maybe next time I'll save a bit for leftovers and give your spin on Troutman's piggy muffaletta a try. Nice job Sweaty Paul !

        This local BBQ guy has started selling "The Rib Dog". He cuts the meat off some spares, puts it in a toasted hot dog bun, adds diced onion and cheese, then melts the latter. MMn.

      That’s a man size samich!!! Wrap me up one in butcher paper and I’ll give you my address. Left overs are starting to be a favorite of yours truly.

        I sometimes think that the flavors merry a bit after a cook and an overnight rest. Thanks for the idea for the sammy.

      That's a great way to use the excess meat that gets trimmed off a rack of spare ribs. Awesome idea!
