Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

Yeah toast! Forgot about that. Is 250 about the optimum temp to run a pellet pooper?

Jerod Broussard, every grill has a different sweet spot. I do well with the thermostat set on 350 in the Cimarron, the actual cooking temp is about 290. The Jambo is about a 275 cooker with wood and about 250 with pellets. I like hot n fast though!

Welcome to the pit from Kansas. I didn't get into the science of the thing before I played with my 640. I did ribs right away. Will calibrate when temps more stable here in KS. I have found that the top rack is 10-15 degrees cooler than the bottom rack, however, it holds temp well and consistently. Bottom rack very close to temp shown on controller within 5 degrees. I have the baffle pushed in 5 to 6 inches (Pulled all way out then pushed back in). Seems to cook very evenly from left to right with that setting, however, as I said before, I haven't played all that much. Good luck!
