Has been very cold in Westen Kansas recently and with work and kid stuff I haven't been able to play with the Yoder YS 640 too much. Despite it being 10 outside last night with 20mph winds I figured a quick cook for some appetizers to take to a friends house would be fun. They were tasty.
The jalapeño poppers were pretty standard. I did do a bit of a wrinkle on the Armadillo eggs. I roasted the jalapeños that went in the eggs and then peeled them so they were soft and it added another level of flavor.
Oh man I love armadillo eggs. They sell them as a specialty item here in the grocery store but are too expensive. Glad you shared how you made them, I'm jotting this one down. Those and the poppers look great man !!!! Kudos....
The stuffing in the peppers was one pkg Philadelphia Cream cheese, cup or so of cheddar cheese, and some Are Butts Are Smoking bbq rub (2 tsp I think). I just put two 1/2 strips of classic cut bacon around each.
