    Internal Temp Question

    I am cooking ribs on my Yoder and I have the thermal jacket on. I am doing the 3-2-1 method but my Fireboard is giving me an internal temp of 200. I assume it’s becaua it’s 21 degrees outside and a bit windy. Is is best to cook the ribs for longer or bump up the Yoder to get an internal temp closer to 225?

    You’re not going to get an proper reading on ribs because of the meat being to close to the bones. I either do the bend test and if the ribs are to thick for the bend test then I do the probe test. If the probe slides through like butter they are done.

    If you’re talking about the smoker just add for fuel.

      The cooker temp is 200 degrees??

        Sorry... not the temp of the ribs... the internal temp of the smoker. Bottom rack is 214 and top rack is 201z

              At 200 they should be done in about 1.5 days.

                I have a YS640 with no insulating blanket. During the cold months here in New Hampshire I always cook at 275. Always good results no matter what I am cooking.

                  At 200 they should be done now. Decent racks are happy cooking above 225. No big deal. How did they turn out??
