Well it's cold here, but I was determined that today would be my first cook on my new GMG DB! First thing was to stir up a batch of Meatheads Memphis Dust. Dusted the rack of baby backs and put it in the fridge last night. Also had a few wings available and figured I would try these for a pre dinner snack. Set the grill at 225 and gave it time to stabilize. Put the ribs and wings on and went to watch some football. After a little over an hour, went out and took the wings off, put some nice sweet bbq sauce on them and finished them on the gas grill for about 10 minutes. The wings were very tasty. Left the ribs on for a total of 4.5 hours. Added some sauce to the top about 30 minutes before pulling them off. Let the ribs rest for 30 minutes and ate them up. On critique of the meal I would say I should have used a little more salt on the ribs and maybe left them on for another 45 minutes to an hour. They tasted very good and were extra tender. I need more practice with rubs and seasoning. I wanted to make my own rub and sauce and improvement can definitely be made. All that being said the wife and I very much enjoyed this first try.

Hi gratz on the ribs! I am looking at purchasing a GMG DB over here (in Scotland), how do you rate the smoker, quality etc. Appreciate your first impressions!

Howdy, Monster. I bought a DB last summer and absolutely love the way it cooks. The best brisket I ever ate came off this grill as did fabulous ribs. Clean the fire box every 5th cook and it will serve you well. Keep track of grill temps and meat temps and you almost CAN'T go wrong. Good luck Fred

Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
