Could somebody please explain to me the purpose of the "Variable Displacement Damper" in the Yoder YS640... And does it really do whatever they say it's supposed to do? Thanks.

Although I do not cook on a YS640, it's my understanding that the variable damper allows you the ability to control the intensity of the heat to certain area's. In other words, push it mostly to the "in" position, and you will be forcing almost all of the heat up the left side of the cooking chamber... perfect for direct grilling/searing. Back off the damper, and you will get a more even heat throughout the entire cooking chamber. Bottomline, the damper puts you in charge of controlling the location and intensity of the heat.

Yoder's Variable Displacement Damper is a metal plate that may be moved from left to right along the lower smoke box. Positioned all the way left, it concentrates heat directly over the fire pot for conductive searing with optional aluminum GrillGrates. Move it back to the right for even heat across the entire smokebox.
