This is from several years back, but seeing steve_woolston pictures on his whole pig cook, thought there may be some interest.
This was not a big pig! It was about 30 lbs.
My brother built me a Pig Rack to hold the pig in place. The spike goes in the backbone about mid point.
I did inject it with flavorful liquid and season the inside cavity.
Ready to go in the FEC100.
In the cooker, note the snout is out the exhaust hole.

Bravo! Whole pig cooks always look awesome. Did it all get eaten? What do you do with leftovers? Do you cut it into pork cuts like ham, ribs, shoulder or just pull it apart? Why the snout out the exhaust?
Had about a dozen people for Thanksgiving. I don't remember leftovers. There's actually a lot of waste on a whole pig. Just pull it apart, peel up the skin on one side and go for it. That's how I put the pig in the cooker. Could have been at the other angle and it might have cooked better!

Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
Man that's awesome dude! My wife is Filipino and they typically cook one for occasions as well, but they can't afford fancy cookers so they utilize open pit.
