I have a nice gasser that I really enjoy cooking on. I have done many different types of meals. I have cooked ribs and brisket on it, and it is very difficult to use for really long cooks. I am going to get a pellet grill, but my gasser is going nowhere. I NEED both to cook like I want to cook.

Can a pellet grill replace a gasser?

I don't think a pellet is a full replacement for a gas grill. My gas grill (older Weber Summit) can sear at high temps, rotisserie, smoke indirect, all with a large cooking surface. However, I'm a big fan of my pellet grill and use it more often than my gasser. if I were you, I would get a pellet grill and keep the gas too!

Give up the PBC.

I am also thinking of replacing a Weber gasser with a pellet / charcoal combination. Part of the reason is that I also sous vide a lot and I am increasingly underwhelmed with the ability of a "reasonably priced" gasser to sear without GrillGrates. One option I am considering is the Camp Chef Woodwind. The sear box on that looks amazing.
