Been cooking on the MAK 2 Star since 10 this morning at 230. Using a blend of pecan and cherry with base of oak wood. Temp is at 190ish. Going to take each off, wrap it and hold it in a cooler to slice up tomorrow morning. Two trays of prepped brisket will go into warmer at 9 tomorrow to hold until after church.

Beautiful briskets Candy Sue! This is a good time to share a little of this lady’s talents with y’all. While at the MeatUp last weekend, most of us were sitting around in the lobby one evening just visiting with each other and enjoying some snacks. Candy Sue had brought a container of pimento cheese and a bag of some home made sour dough crackers. She offered me some to try and I said why not. I gotta be honest here, when she said they were sour dough crackers I wasn’t really expecting what I experienced….I mean, who makes homemade crackers? I first took one of her crackers and dipped it into the pimento cheese. Wow, this is pretty good stuff I said!
The pimento cheese had a great flavor and from what I could tell, the cracker was good too. After a few dips with the cheese I wanted to try the cracker by itself. They weren’t your standard cracker shape or texture, they reminded me more of a squarish shaped thin tortilla chip….looks wise. When I took my first bite I was like….WOW! These are excellent Candy, you MADE these I said? I’m not lying when I told her these were the best crackers I’ve ever had in my life! I mean, who gets excited about crackers? I told her she should and could sell these! She said she’s been told that before, I believe it.
