So this controller seems to think a temp setting is just an option. Quite the carnival keeping it under 250 with a 225 setting. If it was allowed to go as high as it went low it would have been +/- 50 dugreez.
I'm not familiar with the Fireboard controlled grills, but I would suspect you need a few cooks under your belt in addition to the seasoning before things lock in. That's a wild swing though and haven't seen that mentioned for LSG or Yoder with the Fireboard units.

I don't use the built in probe to control the temp opting instead to use an ambient probe clipped to the grate near whatever I'm cooking. That aside, you shouldn't be having those kinds of temp swings. I've never had an issue with mine, so I'm interested in how quickly they respond to you. It's how a company responds to problems that sets them apart from the competition. Hopefully LSG's support is as good as their build quality.
Yeah, it appears to be a firmware update or lack thereof. It is connected right now but looks to be a 2+ hour journey. Hopefully all good in 1.5hrs or so.
Jerod Broussard keep us apprised. If I remember correctly they use Fireboard. They seem to be a very reputable company. Fingers crossed for you that once the update is done you'll be off to the races.
The grill is shipped with 1.1.1 version on the firmware and requires an update to 3. something another. That is why it was so wonky on the seasoning, I think, I hope.
My issue is, after 4hrs of WiFi connection nothing has updated. So I'll be contacting customer service tomorrow so I don't have a $$$$ pile of steel crap under my car port for too long.
