It is officially in Maryland (it arrived at the shipping terminal last night). Now I am just sitting and waiting for the official call to schedule the delivery.

Getting the pellet. I have a meadowcreek offset, though I’m mighty jealous you have the siblings.

Weather is finally cooperating. Just started the seasoning process. Sprayed it down, set to 225, and letting it ride. It blasted up to the 260s, but seems to be trying to come back down to 225 (not sure if normal). I’m gonna let it ride the next few hours and then throw my strip loin on for the first true cook.

Nice touch for them to add a plaque with their phone number on it!

They didn't have any instructions to fire that baby up to 400?

Nope, seasoning says to put at 225 and try not to go over to cure the paint. It’s settled in and actually seems to be really tight on temp swings. I’m pretty impressed so far. 2 more hours and I can throw some food on!
