I have never run my Chimp in PID mode, other than when I first got it to see if it works. Too lazy to make all those changes mid cook. Most of my cooks on it are low and slow set at 225-250. When I do chicken or turkey on it, I set it at 325-350 and let it swing. Never had any bad results. I am like you, I love my chimp so much that I have considered replacing my WSM with an OG or Silverback. My WSM talked me out of that though. At least for now…

It sure is a fun grill to use. And I am trying to keep good notes, especially for all the variables that can go into this.
I realized there is a bit of irony in what I am doing. Three years ago, when I first started grilling/smoking with my Weber Kettle, I was constantly chasing temps. And now, here I am again, in some sense, chasing temps.....with a grill of which one of its primary purposes is to not have you chase temps!
I picked up two 20 lb bags of BBQer's Delight pellets that I'll use when my current Traeger bag runs out to see how they compare. (By sight, they are little different. The Traeger pellets are shinier, almost polished in appearance, whereas the BBQer's Delight have a slightly more gritty look.)
Would love to try Grilla's own blend, but ouchy on that shipping.

There we go! I totally didn't notice the price threshold for free shipping. If I had been thinking, I would have added a bag to the order I did last week to get the cover and cord hanger.

Their shipping is exactly why I haven’t bought too many of their pellets. Supposedly they are made by Lumberjack, which I’ve seen at Dick’s Sporting Goods for $15 bag. Competition blend. Bought a bag and it was excellent.

My personal preference is to use Mode 2 on any cooking temps between 205-500. If 180-200, I prefer Mode 1 to help reduce chance for a flameout and to keep temps at that low of a temp.
