I built a 12 x 40 glass in patio on the back of my house in 2011. 32 ft is living area, 8 x 12 is my cooking area. So I put up a fan. It is 3 speed. Only run it on low, keeps all the smoke out.

Roof advice needed

First off, if it is not a wood roof you really want it to be foam insulated. Unless you LIKE indirect heat. That is not inside a smoker or grill. I am considering replacing a small tiki hut on my patio with an aluminum insulated awning. The hut needs to be rethatched, and that will cost about 20% of what an awning will. So.....yea. I can just cover the entire patio and not just an 8ftx8ft section. Why aluminum? It will last forever, or at least until the next major hurricane. Nothing to rot, nothing to cover with shingles, and so on. The key is foam insulated. You WANT that.
As for the smoke, you can always get a garage wall mount fan to blow it out. Or even install a fume hood. But the smoke will not really damage anything. Discolor it, yes. But actual damage that will need to be repaired? Not really.
For screens I an considering just getting drop down screen curtains. If I want them drop them down, otherwise roll em up.
