I'm planning out a build for a Grillworks parrilla style grill. I want to install it into a hearth, like this "architectural grill": https://www.grillworksusa.com/architectural
I was thinking that I'll have a little room above it to build in a smoking chamber/oven. At first I thought maybe to just build an entirely disconnected chamber, and put something like this in that I could shovel coals into or build a separate fire in: http://tuscanchefovens.com/builtin-oven.php. I'm afraid I won't have enough vertical space, though, only 10" or 15" before it will be too high to use conveniently.
So I thought about building just a smoke chamber above. Kind of like this picture, but rather than a front chimney, I'd try to design a system where I could use dampers to either direct smoke straight up the back chimney past the smoke chamber, or instead into the smoke chamber and then back out into the back chimney through an exit vent further up.
Does this sound crazy? Anyone have any idea how well it would work (would I have draft issues, would the smoke chamber be impossible to keep low enough temp given the placement of the fire underneath (although firebrick and masonry would separate them), etc.). Anyone have any much better idea?
