jfmorris I went with your recommendation (blade guard and all). My wife has really been down on the slicer, "You're not really going to get one of those are you? Where are you going to put it?" It's a legitimate question. Haha. For the price and utility, I'm thinking the slicer knife will be nice to have for a lot of reasons. (Heck, I can use it to trim briskets.) I also now understand why Japanese santoku knifes tend to have those bevels.
I appreciate everyone's input though. If the slicer knife doesn't work well enough, I'll revisit this when I have a bigger kitchen, lol.
Glad to help! Make sure you use a sharpening steel to realign the edge in the blade after use, and only cut on a wood cutting board. I tossed out a bunch of glass cutting boards the wife used to use to ruin all our knives... only plastic and wood now. I’ve yet to buy a good sharpener, but will likely get the work Sharp Ken Onion sharpener.
I've got a few knife sharpeners, but since I grew a brain and got a honing steel, I rarely have to sharpen. And yeah, as Alton Brown says about glass cutting boards, "Dark lord of the Sith evil."
However... I now want a new knife sharpener. That Ken Onion beast looks pretty sweet.
After breaking a $135 Academy slicer after just 15 minutes of use. I got on ebay and bought a 1940 American Slicing Machine deli slicer. Weighs about 80 lbs and I had to do some restoration (I don't mind - vintage appliance restoration is a hobby of mine). It works great! I use it for meats and veggies.
Those things were a sweet machine.. my neighbor gave me one that was on the floor in the corner of his shop,. Told me if I could lift it I could have it. I picked up a Hobart that I use now so I called the neighbors kid to see if he wanted since his dad is now passed on. He was estatic to get it and picked it up 30 minutes later..
