      Thermometer, SnS, heat-proof gloves. It's rare that I cook anything without using all three.

      I also have a fire extinguisher nearby at all times. Never had to use it, but working in fire prevention and the fire service for over 20 years, I've seen too many tragedies that could have been averted had there been a working fire extinguisher nearby.

      I’d say disposable gloves, pink butcher paper, thermapen, foil pans, large covered outdoor area and plenty of beer!

      Tongs
      a grill brush
      fuel (charcoal, pellets, propane, sticks)
      Salt
      Pepper
      a boning knife
      a slicing knife
      A nice thermometer
      And if you have weather, a cover, and if it's windy, a fitted cover.

      That's really everything, assuming you have a minimal kitchen set up with a cutting board or a baking sheet to move crap in and out.

      At the end of the day, salt, pepper, smoke and time are the only essentials to make great tasting food.

          I don't what I go through faster...Paper Towels or Disposable Gloves..,I have paper towel racks on both sides of my kitchen and a third I take out to the cook area...

          I go through at least half a roll of paper towels every time I cook. I frequently wash my hands, and I refuse to use kitchen towels to dry my hands. Gross.

        Just this weekend I cooked several items and it seemed I was always washing my sheet pans, tongs and knife's.

              A sense of humor... mistakes will happen, it's how you handle them and move on that matters. Learned that one with RC Aviation, you will crash, you will destroy your plane. Though a quality RC aircraft can be had for less than a prime packer these days and you can't rebuild a ruined cook... but you can learn from it, laugh at it, and move on.

              A creative spark (or a bit of luck when googling)…you can almost always make something else with the meat you messed up, and sometimes it ends up being the amazing meal you didn't know you wanted.
