Thermometer, SnS, heat-proof gloves. It's rare that I cook anything without using all three.
I also have a fire extinguisher nearby at all times. Never had to use it, but working in fire prevention and the fire service for over 20 years, I've seen too many tragedies that could have been averted had there been a working fire extinguisher nearby.

That's really everything, assuming you have a minimal kitchen set up with a cutting board or a baking sheet to move crap in and out.
At the end of the day, salt, pepper, smoke and time are the only essentials to make great tasting food.

A sense of humor... mistakes will happen, it's how you handle them and move on that matters. Learned that one with RC Aviation, you will crash, you will destroy your plane. Though a quality RC aircraft can be had for less than a prime packer these days and you can't rebuild a ruined cook... but you can learn from it, laugh at it, and move on.
A creative spark (or a bit of luck when googling)…you can almost always make something else with the meat you messed up, and sometimes it ends up being the amazing meal you didn't know you wanted.
