    I don't have one. I don't see any advantage over a knife for the one brisket at a time that I cook. If my knife skills are good enough to slice the brisket when it's cooked, I think they are good enough for the pre-cook trimming.

      Started to type my response and then realized how old the thread is. Anywho, here goes. My dad ordered me one about a year ago because he knew I loved cooking brisket. My knife skills are novice at best. I can get the job done, but nothing is pretty. This tool has helped a little. I use it for the "big stuff." Trimming the big portions of the fat cap. I still pull out a knife for the fine work, but this tool is kinda fun to use. I saw that someone mentioned sharpening. This tool has replaceable razor blades and came with several replacements. I’ve only trimmed 2 or 3 briskets with it so far. I don’t think that I will ever use it exclusively, but it is certainly a nifty little device that, after a little practice, does a pretty good job!
