    Price on the Shun Site: $582 (Pakka wood handles)
    Price elsewhere, like Williams Sonoma, Amazon, etc: $279 (Tagayasan "iron sword wood" handles)

    Of course I don't need it but I sure like looking at the photo.

      I like the looks of that boning knife. For the big brisket knife, I'm happy with my inexpensive restaurant outlet one like Aaron Franklin recommends.

        Yeah, I have a cheap Victorinox with a Fibrox handle for slicing and I love it.

      Wow. $279 seems reasonable. My chef knife was $220 and my boning knife was $129 paring knife is $60. Not shun though.

          I've been through the "fancy knife obsession" phase. Those are really nice looking knives, and the Wiliams Sonoma price seems fair (how often can you say that?). In recent years I've settled on the habit of buying cheaper knives and sharpening them more often. As you mention, restaurant supply stores are great for that.

          But I still love my Wuesthoff chef knife. Bought at W-S, on sale of course!

              I’ve got some shuns and I love them but I got a boning knife and honesuki and slicer from dalstrong (shogun). They seem awesome thus far.

                As best as I could cobble it together, from memory, it simply means
                "Beautiful, Doctor Ka Ta Ri N!" (Anglish names can kinda be funny in katakana/hirigana...

                fzxdoc if I’m not mistaken the set of 3 is about $350. But that may have been a very special price for whom he made them for. It does also take about 3 months to make.
                They are seriously on my want list. I’m thinking about xmass. 🤔

                Note that the "Damascus" treatment on many is just Damascus in the cladding steel. The center/edge is typically a solid steel (if it’s aus 10 or vg10 or better then you are good to go). The cladding is typically something less expensive and more stainless to protect the edge. If they make the cladding Damascus there’s nothing wrong with that.
