Wasn't there, before, or I'd a likely et it, while waitin fer chili mac to get done.
I figger it's somebody's idea of a joke... prolly that way too smart cat o mine.
Too tired to fuss with it, tonight. Mebbe, tomorrow, it will be gone, I dunno...
    (Least it ain't tickin...)

Chef's Choice has an Asian Diamond Honed model, #463

Mostly just the iron to smooth the edge. If it's not chipped (it does happen), this Trizor works well on both western and asian knives. https://www.amazon.com/gp/product/B0...?ie=UTF8&psc=1

I'm too lazy these days to dig the waterstones out, but they're probably the best. If it is chipped, off to a pro.

I use the EdgePro Apex system, but I have had these knives in daily use for many years now and I have only had to sharpen one. And that was because I bought it as a closeout demo from WS and I just touched it up with the fine stone. Other than that I use a ceramic "steel" like this one: https://www.amazon.com/DMT-CS2-12-In...00009YV7S?th=1 every so often and that's all it takes.

Your stove makes me miss the ones with elements. I have the glass top kind, and they are a real pain to keep clean.

Brother, I can feel yer pain, every time I cook on it...
I miss th ones with gas burners!

I'd sooner try to sandpaper an irate alligator's ass in a telephone booth,
or have a horseradish enema administered with a large wire bore brush in a power drill,

than have an electric stove / range.

IOW, not really a big fan, advocate, proponent, etc.
