Going back to the original post, I solved the problem by laying whatever I'm wrapping next to the box, pulling enough wrap out to do the job, and then using a pair of scissors to cut off the wrap, leaving a flap hanging out of the box for next time.

Froze pizza dough last night and stumbled onto an approach that eliminated a bit more of the plastic wrap pain. I cut the amount needed and placed it on the counter rather than on the dough and underlying tray. I then held it to the counter with my right hand, straightened it out with my left, and then lifted and placed it pretty easily around the dough and tray.
